Easy Dinner Casseroles for the New Mama

As a new Mama, dinner can be daunting to think about fixing every night for when your partner comes home from work. Dinner is always during the dreadful witching hour with your baby. My boys would smell dinner cooking and start screaming for their dinner of breastmilk. More than a few nights, I would wear my baby sling and breastfeed while cooking dinner. I needed more easy dinner casseroles to pull out of my freezer.

Were you one of the lucky ones? Did family or friends gift you a meal box plan for those first few weeks at home with your baby?

Before the meal boxes run out the meal boxes run out you should try to plan ahead. I was always looking to make casseroles in bulk that I could freeze. It is so nice maybe open your deep freeze and find it full of frozen casseroles and breastmilk. Cue the angelic singing.

Beef

Western Casserole 

This western meal ground beef casserole is perfect for new moms. It’s quick to put together and tastes amazing.

Ingredients:

  • 1 Pound of Ground Beef
  • 1 Tablespoon Olive Oil
  • 1 Clove of Garlic, minced
  • 1 Packet Taco Seasoning
  • 3 Cups of Dry Brown Rice (cooked as the instructions indicate)
  • 2 Cans of Red Kidney Beans, drained
  • 1 Can of Diced Red Tomatoes, undrained
  • 1 Cup Shredded Cheddar Cheese
  • Salt and Pepper, to taste

Healthy Taco Casserole

This healthy taco casserole is made with all the delicious flavors of Tex Mex in a lightened up way. It’s done in under an hour and makes great leftovers.

Ingredients:

  • 1 lb ground turkey
  • 1/2 yellow onion – diced
  • 1 (16oz) can refried beans
  • OR make your own with 1 can pinto beans
  • 1 cup plain greek yogurt
  • OR light sour cream
  • 1/2 cup chunky medium salsa
  • 2–3 tablespoons taco seasoning
  • 1.5-2 cups Mexican blend cheese
  • OR any cheese you prefer 
  • OR any vegan cheese substitute!
  • 1 Roma tomato – diced
  • 2 tablespoons sliced olives
  • 1/4 cup shredded lettuce
  • 1/4 cup tortilla chips (plus more for serving, if desired)

The Best Stuffed Pepper Casserole

Stuffed Pepper Casserole is the perfect choice when you’re craving the savory flavors of stuffed peppers, but don’t have the time to get fancy. Made in just one large skillet, packed with ground beef, rice, tomatoes, and cheese, and ready in under an hour, unstuffed peppers will be a new family favorite.

Ingredients:

  • 2 tablespoons olive oil
  • 1 ½ pounds ground beef lean
  • 1 yellow onion diced
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 3 small cloves garlic minced
  • 1 teaspoon Italian seasoning or cajun seasoning
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 14 ounces canned diced tomatoes
  • 1 cup long grain white rice
  • 1 ½ cups beef broth
  • 1 ½ cups shredded cheese cheddar, mozzarella, or both
  • parsley for garnish

Easy Homemade Hamburger Helper

This is the best kid-friendly version of easy homemade hamburger helper. With finely chopped vegetables, ground beef, macaroni noodles, tomato soup, and a few more ingredients it is the perfect family-friendly meal at the end of a long busy day.

Ingredients:

  • 1 tbsp extra virgin olive oil
  • 1.5 lb ground beef
  • 1 375g-424g box Macaroni Noodles
  • 1 small onion, chopped
  • 1 red bell Pepper, chopped
  • Salt, to taste
  • Pepper, to taste
  • 3 tbsp brown sugar
  • 3/4 cup ketchup
  • 1 284 mL can tomato soup

Easy Tater Tot Casserole

Your family will love this easy recipe for tater tot casserole with ground beef! It’s the perfect dinner (or even breakfast) to serve to children or guests, and you can even use it as a make-ahead freezer meal.

Ingredients:

  • 32 oz package of frozen tater tots
  • 1 lb ground beef
  • 1 can green beans (drained)
  • 2 cans cream of mushroom soup
  • 1 can corn (drained)
  • 1 cup milk
  • grated cheese

This delicious chicken divine casserole is prepped in 10 minutes and cooked in 40. It’s the perfect quick casserole for new moms.

Ingredients:

  • 2 10 oz. pkg. broccoli (I used Frozen)
  • 4-6 chicken breasts cooked (remove skins and bones), cut into 1 inch pieces (I used all of it, just pulled it off the bone and chopped it up
  • 1 can Cream of Chicken soup
  • 1 can Cream of Mushroom Soup
  • 1 c. mayonnaise
  • 1 tsp. lemon juice
  • 1/2 c. corn flakes or bread crumbs
  • 2 tbsp. butter melted
  • 1 c. cheddar cheese grated

Chicken Stuffing Casserole

This Chicken stuffing casserole is comforting and delicious. It’s easy to put together marking it great for new moms.

Ingredients:

  • 1 ½ cups water
  • 5 tablespoons butter divided
  • 1 package 6 ounces Stove Top chicken flavor stuffing mix
  • 3 large chicken breasts 1 ½ to 2 pounds total
  • Ground black pepper to taste
  • 1/2 pound fresh green beans trimmed and cut into 1-inch pieces
  • 8 ounce container of fresh mushrooms cleaned and sliced
  • 1 small onion chopped
  • ¼ cup all-purpose flour
  • 14.5 ounce can chicken broth
  • 4 ounces cream cheese cubed

Teriyaki Chicken Stir Fry Casserole

Transform all of the flavors you love about chicken stir fry. This easy to make Chicken Stir Fry Casserole only requires a few ingredients but is perfect for a quick dinner.

Ingredients:

  • 1 cup teriyaki sauce
  • 1 1/2 lbs. shredded chicken {about 2 large chicken breasts}
  • 16 oz. frozen stir fry vegetables
  • 1/2 cup canned pineapple tidbits {drained & chopped}

Made with simple ingredients, this Chicken and Biscuits Casserole is easy to make and perfect for a busy weeknight dinner.

Ingredients:

  • 1 tablespoon olive oil
  • ½ cup onion {diced}

Ingredients:

  • 3 boneless skinless chicken breasts, about 1 pound
  • 1 Tablespoon olive oil

  • 1 teaspoon cumin
  • 3/4 teaspoon salt

Ingredients:

  • Baked Mostaccili – already cooked
  • ground beef
  • seasonings – garlic powder, dried oregano, salt, and ground black pepper.
  • Worcestershire sauce

  • heavy whipping cream

  • mozzarella cheese

Best Manicotti EVER

This Manicotti is our favorite casserole freezer meal! It’s full of chicken, spinach and cheese and is absolutely delicious and easy to make!

Ingredients:

  • 1 package manicotti shells 12-14, uncooked
  • 4 ½ cups marinara sauce
  • 2 cups grated mozzarella cheese plus more to put on top
  • ½ cup grated parmesan cheese plus more to put on top
  • 4 oz. cream cheese
  • 1 15 oz. tub ricotta cheese
  • 2 eggs
  • 10 oz. frozen spinach thaw, drain, and squeeze the water out
  • 8 oz. shredded chicken
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon red pepper flakes

Cheesy Mac & Cheese

This Baked Homemade Mac and Cheese {with Panko} is creamy, crunchy, cheesy, and the perfect comfort food for everyone in the family. This recipe is made easy without using a roux. Can be prepared ahead of time.

Ingredients:

  • 1 454g pkg cut macaroni noodles, cooked
  • 1 large yellow onion, finely chopped
  • 1 cup panko crumbs
  • 3 tbsp butter
  • ¼ cup milk or evaporated milk
  • 5 cups marble cheese, shredded
  • 5 cups medium cheese, shredded
  • Black pepper, to taste

This beef noodle casserole is ground beef in a rich tomato sauce, tossed with egg noodles then topped with plenty of cheese and baked to perfection. An easy comfort food dinner that’s perfect for feeding a crowd.

Ingredients:

  • 12 ounces egg noodles uncooked
  • 2 teaspoons olive oil
  • 1 1/4 lbs lean ground beef I use 90% lean
  • 1 onion finely chopped
  • 2 teaspoons minced garlic
  • salt and pepper to taste
  • 16 ounces canned tomato sauce
  • 15 ounce can diced tomatoes drained, I prefer to use the small diced (petite cut) variety
  • 2 teaspoons Italian seasoning
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chopped parsley
  • cooking spray

Meaty, Dairy Free Lasagna

Loaded with beef and creamy vegan ricotta, this meaty, dairy free lasagna recipe is hands down the best you’ll find.

Ingredients:

  • 1 package lasagna, soaked for 2 hours in cold water (or prepared according to package directions)
  • 2 pounds lean ground beef
  • 2 teaspoons minced garlic
  • 2 teaspoons dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon coarse salt
  • 2 23-ounce jars marinara sauce (or homemade equivalent)
  • Liquid mozzarella or vegan mozzarella shreds, for topping
  • 1 tablespoon chopped fresh parsley, for garnish

Meatless

White Bean Casserole

This white bean casserole is a unique meatless meal that is perfect for new moms.

Ingredients:

  • 8 oz crusty bread, cut into 1″ cubes
  • 2 tablespoons olive oil
  • 1 14 oz can fire-roasted diced tomatoes
  • 1 14 oz can cannellini beans
  • 1/4 cup thinly sliced red onion
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1 cup shredded mozzarella
  • 1/4 cup grated Pecorino Romano
  • Crushed red pepper and salt and pepper, to taste

  • 1 Cauliflower head
  • 100 g cashews presoaked
  • 400 ml water
  • 1 tablespoon nutritional yeast

  • 1.5 cup Red Onion chopped
  • 1.5 cup Red Bell Peppers chopped

  • 2 Jalapeños 1 sliced + 1 diced, divided (adjust to taste)
  • 2 cups Corn kernels frozen

Easy Eggplant Casserole Recipe

This cheesy and low-carb easy eggplant casserole recipe is one of the best flavorful dishes you can serve as a main or a side.

Ingredients:

  • 2 Large Eggplant, unpeeled (approx, 1 kg or 2 pounds)
  • ¼ teaspoon Salt
  • Olive oil, just to drizzle
